Directions
Ingredients:
- 1.5 pounds beef sirloin or tenderloin, cut into 1-inch cubes
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 yellow onion, cut into chunks
- 8-10 cherry tomatoes
- 8-10 button mushrooms
- Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes to prevent burning)
- Salt and black pepper to taste
- Olive oil
Marinade:
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- Juice of 1 lemon
- Salt and black pepper to taste
Instructions:
- In a bowl, whisk together all the marinade ingredients until well combined.
- Place the beef cubes in a resealable plastic bag or a shallow dish. Pour the marinade over the beef, making sure it is evenly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, or preferably overnight, to allow the flavors to meld.
- Preheat your grill to medium-high heat.
- While the grill is heating up, prepare the vegetables and assemble the kabobs. Thread the marinated beef cubes and vegetables onto the skewers, alternating between the beef, bell peppers, onion, tomatoes, and mushrooms. Leave a little space between each ingredient to ensure even cooking.
- Season the assembled kabobs with salt and black pepper to taste, and lightly brush them with olive oil.
- Once the grill is hot, place the kabobs on the grill grates. Grill for about 8-10 minutes, turning occasionally, or until the beef is cooked to your desired level of doneness and the vegetables are tender and lightly charred.
- Remove the kabobs from the grill and let them rest for a few minutes before serving.
