Fajita Taco Salad Recipe
Ingredients:
- 1 lb Faithway Cattle Co. fajita meat, sliced thinly
- 1 tablespoon olive oil
- 1 packet fajita seasoning mix
- 1 head lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 cup corn kernels
- 1 cup black beans, drained and rinsed
- 1 avocado, diced
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1/4 cup salsa
- Tortilla chips, crushed (optional)
- Lime wedges, for garnish
- Fresh cilantro, chopped, for garnish
Instructions:
- In a large skillet, heat olive oil over medium heat. Add sliced fajita meat and cook until browned, about 5-7 minutes.
- Sprinkle fajita seasoning mix over the meat and stir to coat evenly. Cook for an additional 2-3 minutes until the meat is cooked through. Remove from heat and set aside.
- In the same skillet, add sliced bell peppers, onions, and corn kernels. Cook until vegetables are tender-crisp, about 5-7 minutes.
- In a large salad bowl, layer chopped lettuce, cherry tomatoes, black beans, cooked fajita meat, sautéed vegetables, diced avocado, and shredded cheese.
