Directions
Ingredients:
- 2 tbsp. oil of choice
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (28oz) crushed tomatoes (or 6-7 medium ripe tomatoes, chopped)
- 2 cups Faithway Cattle bone broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp sugar (optional, to balance acidity)
- Salt and pepper, to taste
- 1/2 cup heavy cream or coconut milk (optional, for a creamy finish)
- Fresh basil (optional, for garnish)
Instructions:
Sauté the onion and garlic:
- Heat the oil in a large pot over medium heat. Add the chopped onion and sauté for about 5-7 minutes until softened and translucent.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Add the tomatoes and seasonings:
- Stir in the crushed tomatoes (or fresh tomatoes if using) along with the dried basil, oregano, and sugar (if using). Mix everything together.
- Add Faithway Cattle bone broth:
- Pour in the bone broth and stir to combine. Bring the soup to a gentle simmer. Let it cook for about 15-20 minutes to allow the flavors to meld together.
- Blend the soup (optional):
- For a smoother texture, use an immersion blender to blend the soup directly in the pot, or carefully transfer the soup in batches to a countertop blender. Blend until smooth and creamy.
- Finish with cream (optional):
- If you prefer a creamy tomato soup, stir in the heavy cream or coconut milk and heat for an additional 2-3 minutes.
- Season and serve:
- Taste and adjust the seasoning with salt and pepper if needed. Serve hot, garnished with fresh basil leaves if desired.
Enjoy your rich and comforting tomato soup made with Faithway Cattle bone broth!
